Tropical Traditions Coconut Cream Concentrate

I recently tried Tropical Traditions Organic Coconut Cream Concentrate. I thought this was similar to coconut milk, but I was wrong. Instead, it is certified organic whole coconut meat in concentrated form. It contains no additives* (not even water). The dried coconut meat is ground very finely, giving it a creamy consistency due to its high fat content. Since it is 70% fat, it is a rich source of pure coconut oil.
There are so many uses for Coconut Cream! By adding 1 or 2 teaspoons of Coconut Cream Concentrate with water or juice, one can make a creamy coconut drink. It can be used as non-dairy creamer, be blended into smoothies and soups. With it's low moisture content, it is perfect for cooking and baking. Mix it directly into the batter or dough of breads and pastries. I found a delicious No Bake Coconut Cream Cheesecake.
